Rhubarb Muffin Recipe
Recipe from my mom’s friend Debbie Steeves.Â
Ps. This is my boyfriend’s favorite thing I bake! He loves them.
IngredientsÂ
- 2 ¾ cups of flour
- 1 teaspoon of baking soda
- 1 ½ cup of brown sugar
- 1 teaspoon of saltÂ
- 1 cup of fresh or thawed rhubarb
- 2 tablespoons of flour
- 1 egg
- ½ oil
- 1 cup buttermilk
- 1 teaspoon of vanilla
Directions
- Preheat oven to 350
- Line muffin tins and set aside.
- Mix rhubarb with 2 tablespoons of flour in a small bowl and set aside.
- Mix dry ingredients in a large bowl.
- Mix wet ingredients in a medium size bowl.
- Add wet ingredients to dry ingredients and mix well. Add rhubarb mixture, finish mixing.
- Use a tablespoon to put mixture into muffin tins, filling just over half full.
- Bake for 30 minutes or until fork comes out clean.
Note: one of my favorite snacks is apples or fruit with a dip. It’s something great to have that’s sweet but still fairly healthy if you have it in small portions. Sometimes I buy the chocolate or caramel dip from the store, and of course there’s peanut butter, but here I will share a few of my other recipes!
