Rhubarb Muffin Recipe

Recipe from my mom’s friend Debbie Steeves. 

Ps. This is my boyfriend’s favorite thing I bake! He loves them.

Ingredients 

  • 2 ¾ cups of flour
  • 1 teaspoon of baking soda
  • 1 ½ cup of brown sugar
  • 1 teaspoon of salt 
  • 1 cup of fresh or thawed rhubarb
  • 2 tablespoons of flour
  • 1 egg
  • ½ oil
  • 1 cup buttermilk
  • 1 teaspoon of vanilla

Directions

  1. Preheat oven to 350
  2. Line muffin tins and set aside.
  3. Mix rhubarb with 2 tablespoons of flour in a small bowl and set aside.
  4. Mix dry ingredients in a large bowl.
  5. Mix wet ingredients in a medium size bowl.
  6. Add wet ingredients to dry ingredients and mix well. Add rhubarb mixture, finish mixing.
  7. Use a tablespoon to put mixture into muffin tins, filling just over half full.
  8. Bake for 30 minutes or until fork comes out clean.

Note: one of my favorite snacks is apples or fruit with a dip. It’s something great to have that’s sweet but still fairly healthy if you have it in small portions. Sometimes I buy the chocolate or caramel dip from the store, and of course there’s peanut butter, but here I will share a few of my other recipes!
