Lasagna Soup

Recipe originally from Cooking Classy & was altered.

Ingredients 

  • 1 tablespoon olive oil
  • 1lb ground beef
  • 1 small yellow onion
  • 1 teaspoon garlic powder
  • 1 container low-sodium chicken broth
  • 2 cans of crushed tomatoes
  • 1 can tomato paste
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1 teaspoon rosemary
  • 1 teaspoon thyme
  • 2 cups shredded mozzarella cheese
  • 1 cup parmesan cheese
  • 3 tablespoons cottage cheese
  • 4 cups bow tie pasta
  • Fresh parsley- optional- for garnish

Directions

  1. Brown ground beef over medium heat, drain fat and set aside.
  2. In a large pot, heat olive oil, add chopped onion and saute for about 3 minutes.
  3. Pour in broth, crushed tomatoes, tomato paste, and spices. Then add ground beef to the pot.
  4. Bring to a boil, then reduce heat, cover and simmer for 20 minutes.
  5. Meanwhile cook pasta according to package directions.
  6. In a mixing bowl, using a fork, stir together mozzarella, parmesan and cottage cheese.
  7. Add cooked pasta to soup, can thin soup with a little more broth if desired.
  8. Serve soup with dollops of cheese, and add fresh parsley for garnish if desired.
