Lasagna Soup

IngredientsÂ
- 1 tablespoon olive oil
- 1lb ground beef
- 1 small yellow onion
- 1 teaspoon garlic powder
- 1 container low-sodium chicken broth
- 2 cans of crushed tomatoes
- 1 can tomato paste
- 1 teaspoon basil
- 1 teaspoon oregano
- 1 teaspoon rosemary
- 1 teaspoon thyme
- 2 cups shredded mozzarella cheese
- 1 cup parmesan cheese
- 3 tablespoons cottage cheese
- 4 cups bow tie pasta
- Fresh parsley- optional- for garnish
Directions
- Brown ground beef over medium heat, drain fat and set aside.
- In a large pot, heat olive oil, add chopped onion and saute for about 3 minutes.
- Pour in broth, crushed tomatoes, tomato paste, and spices. Then add ground beef to the pot.
- Bring to a boil, then reduce heat, cover and simmer for 20 minutes.
- Meanwhile cook pasta according to package directions.
- In a mixing bowl, using a fork, stir together mozzarella, parmesan and cottage cheese.
- Add cooked pasta to soup, can thin soup with a little more broth if desired.
- Serve soup with dollops of cheese, and add fresh parsley for garnish if desired.
