Homemade Chicken Parmesan

Ingredients

  • Chicken breast, sliced down the middle to make thinner
  • Salt & pepper to taste
  • Flour
  • 2 eggs
  • Bread crumbs
  • 1 tablespoon olive oil
  • 1 can of tomato sauce
  • Parmesan cheese
  • Mozzarella cheese
  • Parsley for garnish

Directions

  1. Preheat oven to broil, put olive oil in a medium frying pan and turn on medium heat
  2. Slice a chicken breast directly down the center, making two thinner chicken slices. If you don’t do this and use whole chicken breasts, chicken will most likely not cook throughout center, and you will have to add cooking time, which could result in over cooking.
  3. Salt and pepper both sides of chicken and then coat both sides in flour.
  4. Dip each chicken breast in egg, then bread crumbs. Place in frying pan and fry on each side until you achieve the desired golden brown.
  5. Put a thin layer of tomato sauce in the bottom of a glass baking dish, when chicken is done frying, place it in the pan.
  6. Add another thin layer of tomato sauce, parmesan cheese, grated mozzarella cheese, then an additional layer of parmesan cheese.
  7. Broil until cheese is melted and double check to make sure chicken is cooked throughout.
  8. Add parsley for garnish, enjoy!
