Sweet Potato- My Favorite Carb!!

Ingredients
- one or two large sweet potatoes
- coconut oil
- cinnamon
Directions: Option 1
- Preheat oven to 400
- Spray a baking sheet with coconut oil, set aside
- Slice sweet potatoes into chunks, place on baking sheet. Sprinkle a thin layer of cinnamon over top the chunks, spray again with the coconut oil.
- Bake sweet potatoes for about 30-40 mins, depending on the size of the chunks.
- These are seriously delicious! One of my favorite snacks/lunches, seriously tastes like you’re eating sweets>
Option 2
- Put a heaping teaspoon of coconut oil into a frying pan on medium heat, let melt
- Slice the potato(es) into thin wedges
- Place the wedges in the pan, not overlapping them, fry until the wedges begin to turn golden brown, then flip and do the same to the other side
- After frying in complete, sprinkle cinnamon over the potato wedges, then serve, seriously taste like chips, so good!!
