Sweet Potato- My Favorite Carb!!

Ingredients

  • one or two large sweet potatoes
  • coconut oil
  • cinnamon

Directions: Option 1

  1. Preheat oven to 400
  2. Spray a baking sheet with coconut oil, set aside
  3. Slice sweet potatoes into chunks, place on baking sheet. Sprinkle a thin layer of cinnamon over top the chunks, spray again with the coconut oil.
  4. Bake sweet potatoes for about 30-40 mins, depending on the size of the chunks.
  5. These are seriously delicious! One of my favorite snacks/lunches, seriously tastes like you’re eating sweets>

Option 2

  1. Put a heaping teaspoon of coconut oil into a frying pan on medium heat, let melt
  2. Slice the potato(es) into thin wedges
  3. Place the wedges in the pan, not overlapping them, fry until the wedges begin to turn golden brown, then flip and do the same to the other side
  4. After frying in complete, sprinkle cinnamon over the potato wedges, then serve, seriously taste like chips, so good!!
