Chicken Fried Rice

Original recipe.

Ingredients

  • Chicken breasts
  • Rice
  • 1 egg
  • 2-4 sticks of celery
  • 1 cup of peas
  • Soya sauce 

Note: measure ingredients based on your desired amount of rice. For two people and some leftovers I usually make 2 cups of rice and use 2 chicken breasts.

Directions

  1. Prepare rice according to directions on package
  2. Chop chicken into small chunks, fry in a large frying pan at medium heat.
  3. Chop up celery, once chicken is cooked add celery and peas to the frying pan. 
  4. Create a space in the frying pan to add uncooked egg, crack egg and place into pan, stir egg around as it cooks, mix in with chicken and veggies. 
  5. Once rice is prepared, add rice to the pan, mix all ingredients together, add desired amount of soya sauce.
  6. Let simmer for a few minutes, then serve and enjoy!
